Japanese Curry Rice チキンカレーライス


Terrible at handling spicy food? Yet craving to eat not-so spicy curry? Well, there is a solution for you! 

Since my last submission, I had my holiday for quite some time~ Busy with my part-time, I became even lazier to practice my hobby or even prepare homemade food ;(( 

However, after months of procrastination (2months to be exact)
Yes, I made curry rice!! *yum yum* Don't worry much, I have broken down the recipe into 4 simple steps!

Step 1: 
Starting off, these are the basic ingredients which you will need to cook the perfect chicken curry rice 

  • 2 Potato 
  • 2 Onion
  • 1/2 Carrot 
  • 1 packet/ 250g of Chicken Breast Meat or any type of meat you prefer
  • 1 box of Vermont Curry
The above portion is for 2~3 person. For the curry roux, there are 3 different type of spiciness varying from mild to hot.



As for the rice, I have chosen the Okome Shortgrain Rice. As it was one of the most affordable Japanese rice available at the supermarket. 

Step 2 :


Firstly, cut the carrot, onion and potato into bite-size pieces. 
As you will need to stir-fry the vegetables.


Similarly, repeat the step for the chicken meat as well ~ 

Having prepared the above ingredients, heat up your pot and pour a tbsp of cooking oil to stir-fry the vegetables and chicken meat. 
** Ensure that the meat is cooked until no longer pink. 
Please start off with the onions, then the carrots and finally the potatoes. The chicken meat will be cook last. 

Step 3:

Prepare 850ml of water and pour it into the pot. When it begins boiling, check to remove the white foam appearing on the top layer of the soup. 

After the first boil, lower the heat and allow the water to boil in low heat for about 15~18minutes. Then, turn off the fire to stop all boiling.

**Try not to use a lid if you want your to eat a delicious plate of curry rice! In my case, as i do not have the most ideal pot to boil the soup and vegetables, I had no choice but to use a lid to avoid spilling of boiling water. 

Step 4:

Having turned off the heat, add 1/2 of the curry roux into the pot. Please definitely do not add the curry cubes without turning off your fire >;( 

Similar to the above photo, mix the curry cubes until it completely dissolves.  
Last but not least, boil the curry gently for 10minutes / simmer the curry.

Feel free to fry additional ingredients of your choice, for instances, you can include eggs etc.
